Step 1:
Take the bottom tier cake (the largest) and place on the drum board. (Tilting table is not necassary).
Step 2:
Use a bit of your Marzipan to put around the base of your cake, this is to make the cake even when you put your Icing on.
Step 3:
knead the Marzipan well then roll out the Marzipan. (if sticky put some icing sugar down. To make this easy for you, measure around the cake. Then roll the Icing to match the measurments. Boil apricot jam, put on the cake before placing the Marzipan on top.
Step 4:
Now place your Marzipan over the cake. Use a smoother or your hands to go over the top and sides and smooth it down to cover the entire cake. Once this is done, use a knife to cut loosely around the excess Marzipan, leave around 2mm gap. Once your happy, cut tightly around the cake to get your desired effect.
Step 5:
This is the finished result. Smooth over the cake to make sure there are no bumps. If an air bubble occurs, pierce a tiny whole and smooth it out again.
Step six:
After kneading the Icing, like the Marzipan roll out onto icing sugar and measure again. This time using cooled boiled water (incase the jam runs through), brush it over the Marzipanned cake and place the Icing ontop.
